I am not a “sweets-in-the-morning” person… so when I discovered savory oatmeal, I just had to give it a shot. That’s right, savory. I first heard/saw this obscure sounding breakfast on Mommy Martha’s page. All of sudden, I started seeing recipes everywhere. A blog I follow, Emmy Cooks, posted multiple variations of savory oatmeal… apparently I am not the only obsessed.
I whipped up this combo the other day and just can’t get enough of it! Seriously… so good! (Definitely not Ew, seriously? So gross!)
This recipe makes a single serving. Easily doubled or tripled!
Savory Oatmeal with Gorgonzola, Rosemary, and Egg
1 cup water
1/2 cup oats (not quick-cooking)
1 egg
1 tsp rosemary
1-2 tbsp crumbled gorgonzola
pinch of salt
drizzle of evoo
fresh pepper
1. Boil water, salt, and rosemary. Add the oatmeal, reduce heat, and simmer for 5 minutes. Remove from heat.
2. In a separate pan, heat the olive oil. Crack the egg, toss some pepper on top of the egg, and cook sunny-side-up. (Over medium heat, it should take about 3 minutes for the white to entirely cook).
3. Put the oatmeal in a bowl, sprinkle with gorgonzola, and top with the fried egg. Enjoy with your morning cup o joe!
